[Jiangxian County] Zhang’s Spicy Soup & Shuijianbao

As early as the end of the Qing Dynasty, the spicy soup and Shuijianbo in Xinzhuang Village, Jiangxian County started to be sold. From the beginning of Zhang Chenghao to the present Zhang Weiye, it has been passed down for 6 generations has a history of more than 100 years. It has become a local famous food and is very popular with the masses. Steps for making the spicy soup are as follows: put the sweet potato starch noodles, gluten and tofu into a pot and cook; when it is medium well, thicken the soup by pouring an appropriate amount of fine starch solution while stirring; and then add the prepared seasoning including pepper, fennel and refined salt. A pot of colorful and fragrant Spicy Soup is ready now. It is better to enjoy it with vinegar and sesame oil. Shuijianbao (literally meaning bun with fillings fried in the mixture of water and oil), is made with fine raw materials and traditional techniques (poaching, steaming, frying). There are two main types of fillings, meat filling (mainly pork) and vegetarian filling (chives with eggs or chives with tofu). Golden in color, crispy on one side, soft and tender on the other three sides, it enjoys good reputation all across the country. It also achieves balance of being crispy but not hard, fragrant but not greasy. During the International Guangong Art Festival in Yuncheng, it won praise from Chinese and foreign diners on the Specialty Exhibition as the representative of Jiangxian County.
